Allow Editing of Single-Option Questions in Learning Activities
In the recent update to the assessment authoring tool, questions that contain only a single answer option can no longer be edited and saved. This creates a significant issue for our learning activities, as many of them use single-option “confirmation” questions to verify learner understanding.
Because these activities also contain embedded video, we periodically need to update the embed code (e.g., when platforms like Vimeo or YouTube change how their embeds work or when a video becomes unavailable). At present, we cannot make these necessary updates if the activity also contains a single-option question. Creating a new version of the activity helps for future learners, but it does not resolve the issue for users currently completing the module who remain stuck with the outdated, broken version.
We would like to see the ability to add an additional answer option when editing an existing single-option question. This would allow the question to meet the current authoring requirements and would restore our ability to update learning activities that rely on embedded media.
This capability change would remove a significant workflow blocker and prevent broken content for learners currently in progress.

I too have long asked for deeper editing capability in published assessments.
If I read your issue correctly i.e. that in a published quiz with class instances, - multi choice question - single correct answer - we can't make desired changes.
True we can't edit its overall structure i.e. which question is selected as correct. (e.g. item 4 etc.)
So my work around with the above issue is to adjust all the text (e.g. question text, and selections text)
So I must make the correct answer still at for example number 4, but I can adjust text to suit.
Doing this workaround does have some issues in that - as text changes they will be visible to any student who enters the assessment after the change, and this will be different to what the student may have seen before, so the issues may need to be considered in your case, whether this is suitable.Generally I use this when a critical issue is identified in a single answer multi choice Q that is in use, so creating a new version becomes troublesome. I may leave a note in the assessor instructions to try to manage any questions that may arise.
Other than this work around I too request for deeper editing capability in published assessments.
