Multi Short Answer - Drop Down Box

As others have previously mentioned, this is a good question type for mimicking forms for digital submission.

I am aware we can add checkboxes for students to select against, but it would be great if there was also a drop down option where there may be several options to choose from. Ie. If you're using checkboxes for 5+ options, this will begin to take over most of the form.

I do not think this would need to be an automarked answer like dropdown select currently is within fill in the blanks, just a list of items you want a student to choose from depending on the context of their submission.
