Changing default assessment submission email

I would like the functionality to be able to change the text in the default assessment submission email.

If this isn't possible, having the functionality to change what email is the default assessment submission email, would also be advantageous. 

This would allow you to inform the student of other information e.g. exactly what they are to do next etc, without having to send another templated email.
