Merge Documents - Making Salutation, Farewell & Sender Default Fields

It would be great to be able to choose the default for the Salutation, Farwell and Sender at the time of creating a Mail Merge Document. (with the ability for it to be overwritten if required)

Often our documents will be the same every time we send it and we often send one after the other and having to select these becomes repetitive.
