Add email address to admin online enrolment & enquiry notification email

It would be helpful to have the email address included in the enrolment confirmation that we receive.

We already receive their name, organisation and phone number, so it shouldn't be too difficult to include their email address field in the summary email received.

Their name hyperlinks directly to them within the axcelerate platform, however we don't always want/need to log in to axcelerate, as this feels like an unnecessary extra step, especially if we're receiving a batch of 10 or 20+ enrolments.
